Elizabeth White domesticated the native blueberry in the United States. She teamed with the USDA botanist, Frederick Coville, in 1911 to crossbreed the berries and sold the first commercial crop in 1916 in New Jersey. Blueberries are blue because of their anthocyanins. (Anthocyanin is Greek for Anthos or flower and kuanos or blue). The berry is eaten fresh or dried or juiced and easily canned or made into jams or preserves. Blueberries are loaded with dietary fiber, manganese, Vitamins K and C, potassium, phytoflavinoids, and antioxidants.
