The vanilla bean is a pod that holds nibs add both fragrance and flavor to both savories and sweets. The pod opens like a pea pod and the nibs are scraped out easily with a knife or spoon. Although expensive, vanilla pods can be used several times and afterward, just pop them into a canister of sugar to scent the granules for months. No wonder our tea blender chose vanilla to scent our lightly oxidized oolong.
